This Keto breakfast of bacon chops, guacamole and poached eggs is seriously the breakfast of champions!
Do you know how hard it is when you make in an insane keto breakfast and then you have to photograph it? I was dying to dig into this plate of goodness yesterday so much so that I nearly forgot the poached egg “money shot”. I mean what kind of food photographer would I be if I hadn’t clicked off a few rounds with the Mark IV with the yolk all oozey?
I found these bacon chops in my local Aldi. I thought they would be pretty tasty, but let me tell you… tasty is too small a word! If you love bacon you are going to love these babies! So bloody delicious! Today I went back and bought 3 more packets. I have no idea why I felt the need to buy so many but I did. Maybe it is the fact that I don’t do all my shopping at Aldi? And, for those of you wondering it doesn’t look like these are just a sale item hey look as though they are part of their main lines.
Of course talking keto breakfast we are talking “break the fast”. Breakfast can be at any time of the day. My break fast of these bad boys was at 12:30 yesterday after an 18 hour fast. The combination of the guacamole and fresh eggs was just perfect. I have to say thank you to a Thornton neighbour and fellow keto follower Lynda Watters and her “especially delicious” teeny tiny fresh eggs. These eggs are so cute and so tasty, but also so tiny.
Keto Breakfast Meal Plans
I am adding this breakfast to our 365 keto breakfast choices. For the new meal plan format I have decided to have a page of options for the breakfasts where you can choose your breakfasts, as well as snacks or any desserts you wish to have throughout the week. If you haven’t yet seen what the new 7-Week plan and other plans now include I have added weekly meal plans along with shopping list and 7 day printable plans. Within the next week I am adding tabs for the choices as well as Bake Ahead with a link to each bread recipes so that will cover you off for each meal plan. This is all been put together to make keto a lot easier for you to track and come up with fresh ideas. Along with the full recipe collection index you should never want for any keto recipes, and if you do then feel free to ask me on Fb or in the comments below to “ketofy” your favourite recipes that are not suited to the ketogenic lifestyle.
If you are just starting out and have not yet picked up your Beginners eBook complete with 7-day meal plan and then click here to get your copy for only $7AUD. This book has been one of my post popular books to date.
I hope you love the recipe as much as I do. The only carbs that are in this recipe come from the avocado, herbs and lime, so I would say those carbs are fine by me.
The keto breakfast of champions. Bacon chops are the best!
- 2 50g bacon chops 1 got these in Aldi, but you can get a butcher to cut thick bacon
- 20 g butter
- 2 eggs use the freshest un-pasteurised eggs
- 30 g white vinegar
- 1/2 avocado
- 20 g lime juice
- 1 tbsp fresh parsley or cilantro chopped
- 1 tsp jalapeno fresh and chopped
- salt and pepper to taste
- chilli flakes
In a small frypan heat butter over medium heat and cook bacon until golden
While bacon is cooking poach eggs in a small saucepan of simmering water with vinegar for 2 minutes for a soft poached egg
In a small bowl mash avocado with lime juice, fresh herbs, jalapeño and salt and pepper
Serve with salt and pepper to taste and chilli flakes
If you can't find bacon chops and don't have a local butcher to cut them thick for you then you could use speck or kasher rip both of which are usually found in the deli meat sections in selected supermarkets. Alternatively normal bacon or pork chops would be an equally great substitute.
