Keto Chicken Piccata is a delicious low-carb dish perfect for anyone following a ketogenic diet. This dish features tender chicken breasts cooked to perfection in a flavorful sauce made with lemon juice, butter, garlic, and capers.

Creamy lemon chicken piccata is a great dish to make for a special occasion or a weeknight dinner. It is sure to impress with its delicious flavors and elegant presentation.

Chicken Piccata Ingredients

  • Chicken – Use boneless skinless chicken breasts or chicken thigh fillets.
  • Lemon Juice – use fresh lemon juice.
  • Capers – capers are traditional in a piccata sauce. If you do not like them you could substitute kalamata olives.
  • Chicken broth – I use a good quality chicken broth. Some recipes use a combination of white wine and chicken broth.

How To Make Chicken Piccata

Step 1. Melt half the butter and oil in a large skillet over medium heat until it starts to foam.

Step 2. Add lemon juice, capers, and stock. Simmer for 5 minutes.

Step 3. Add the other half of the butter, xanthan gum, and chicken. Simmer for 5 minutes until the sauce thickens.

Ingredients 

  • 800 g (28 oz) chicken breast or thigh fillets
  • 2 tsp (2 tsp) garlic powder
  • 1 tsp (1 tsp) onion powder
  • 150 g (5.29 oz) butter
  • 50 g (3 tbsp) olive oil
  • 100 g (3.53 oz) lemon juice freshly squeezed
  • 80 g (½ cups) capers
  • 300 g (1 2/7 cups) chicken broth or stock
  • 1/2 tsp (0.5 tsp) xanthan gum
  • 2 cups (2 cups) mixed greens

Instructions

CONVENTIONAL METHOD

  • Preheat oven to 200℃ fan/220°C static/425°F. Line a baking tray with baking paper.
  • Place chicken onto baking tray and season with garlic and onion powders. Bake 15 minutes, turning halfway through.  
  • To large frypan add half the butter and oil and fry until starts to foam.
  • Add lemon juice, capers, and stock. Simmer for 5 minutes.
  • Add remaining butter, xanthan, and chicken. Simmer for 5 minutes until sauce thickens.
  • Meanwhile while the chicken is cooking start your sauce

THERMOMIX METHOD

  • Preheat oven to 200℃ fan/220°C static/425°F. Line a baking tray with baking paper.
  • Place chicken onto baking tray and season with garlic and onion powders. Bake 15 minutes, turning halfway through.  
  • Add half the butter and oil to mixer; cook 4 min/98℃/speed 1.
  • Add lemon juice, capers, and stock; cook 5 min/98℃/speed 1.
  • Add remaining butter, xathan gum, and chicken; cook 5 min/98℃/reverse/stir.
  • Serve with fresh parsley over chicken and a mixed greens

Notes

This is a beautiful dish.  For different variations this would be delightful with salmon or any white fish or seafood as well.
Store in the fridge up to 3 days. Can be frozen in an airtight container.

    This was a delicious zesty dish. I added cabbage at the end to wilt it and serv d on a bed of rocket.
    It was hard to stop at one serve.
