A white chocolate keto Snickers bar recipe? Of course, I had to go there…

Let me tell you though this keto snickers not only resulted with blood spilled but also me passing out after only barely making it up the stairs before I collapsed.

Well, it wasn’t from a sweet rush or the flavour, but I have a big tip.  When you coat this in chocolate and let it set, don’t do it on a plate, and don’t try and prize the bars off said plate with a steak knife… you may just stab yourself!

Anyway, stupid injuries aside this is a great recipe for a delicious keto protein bar.

Keto Snickers Bar Ingredients

Aside from the Sukrin products, here are the ingredients I have used in the keto Snickers bar and their possible substitutes.

Sugar Free White Chocolate. I use Vitawerx, but I do know there are a couple of other brands. Just as an FYI please read the labels on sugar free products. Unfortunately, many of the products on the market do contain nasties like maltitol that can have adverse effects to blood glucose and ketones.

Whey Protein Isolate. I use Isopure. Whey protein isolate (WPI) is different than whey protein powder or concentrate. It is higher in protein and lower in fat. It’s results in baking and in these bars is better than a concentrate. If you do substitute with other powders or plant-based isolates the texture of the nougat may be affected, and the macros will be different.

Coconut Oil – I use MCT oil. You can use any coconut oil in liquid form.

Sukrin Products in Australia

If you are familiar with how I do my caramel and protein bars, then you will know that this is yet another Sukrin product recipe. 

I like using these products as the end result is amazing and they are so easy to convert a standard recipe to keto. 

It is funny that once upon I time, I had members telling me I should become the supplier when it left Australia, and I was like yeah…nah!  Damn I should have!  It has so many great applications in both sweet and savoury recipes. 

Anyway, at this stage NO, there is no substitute for the Sukrin syrups in Australia, so don’t ask as you will need to buy from the one only supplier in Australia. 

I have included the links within the recipe.  For those of you around the rest of the world seek your local supplier or substitute Vitafibre (the only other product I believe will have similar results).

Ingredients 

First step

  • 60 g (0.5 cups) almonds roughly chopped

White Chocolate Nougat

Caramel

  • 200 g (1 cups) Sukrin Gold Fibre Syrup click link for only Australian supplier
  • 60 g (2 oz) butter
  • 80 g (5.5 tbsp) thickened cream
  • 60 g (2 oz) almonds roughly chopped

Coating

Instructions

  • I use a silicone large icecube tray would be perfect for 32 x 4cm mars bites.
  • Preheat oven to 180℃. Lightly toast chopped almonds until lightly golden. Reserve.

NOUGAT

  • Place cgold syrup and white chocolate in large pyrex bowl and microwave for 1 minute. Stir to combine and melt chocolate.
  • Add whey protein isolate and MCT oil and mix until combined. With a gloved hand massage mix until it is no longer grainy.
  • Spoon or break off pieces and push into moulds (will make 32 x 4cm moulds)

CARAMEL

  • Place all the caramel ingredients into a large pyrex bowl. Heat on high for 3 minutes. Carefully remove from microwave. Stir mixture and return to microwave. Cook for a further 2-3 minute intervals until mixture looks very bubbly when you take out and when stir becomes thicker and more viscose. At this point you will definitely smell a caramel scent.
  • Carefully spoon the hot caramel into your moulds and top with toasted almonds.
  • Refrigerate until set.
  • Melt chocolate and coconut oil and thinly coat each snickers bar. Place onto piece of baking paper. Allow to set before cutting into bars.

Notes

1. At this point there is no keto alternative available in Australia for Sukrin syrups products. I make these recipes with the products because I can easily replicate many recipes that previously would have been created with sugar products. 
2. Chocolate: for the Milk Chocolate you can use any of the following 0 sugar varieties Sukrin Milk, Vitawerx, or Well Naturally. Each of these brands offers a low carbohydrate, no sugar at all, and low-calorie option. This recipe is suitable to be done with any kind of chocolate white, milk or dark.
3. The bars are best stored in an airtight container in a cool dry place. If refrigerated you will find that they are a lot harder, just like the real thing if stored in fridge or freezer.
4. All keto sweets should be a sometime food.
5. Please use caution when making the caramel. The instructions for the microwave are open in time as many microwaves have different wattage. In mine at 750W I find the caramel takes around 8-10 minutes. As it starts to get a little thicker you will notice if you check your spoon after 30 seconds you can gauge what “ball” or setting stage your caramel is at. For your convenience I have included a video to show you the look and feel the caramel has when it is ready to pour.
6. It should be noted that due to Sukrin labels including net carbs on the label this recipes carbs are calculated as net carbs per portion.

    Was so excited to try this recipe~ all 4 of my favorite flavors in one bar?! YUM! So I made it last night, except my caramel turned hard as a rock after the first ‘interval’ of 2-3 minutes~ past the initial 3 minutes (I set it for 2) to melt all ingredients together. I knew my microwave was more powerful than 750 watts, so I adjusted accordingly. After the first 2 mins, I stirred everything together, then set it for a second 2 mins, at which point it was already bubbly/boiling, so I took it out to stir & as I was stirring, it began to solidify into a blob in the center w/the butter separating away from the caramel blob! Oh my word, I was SO sad. Apparently, my microwave is not a good appliance for caramel making~ I just told my husband I desperately need a Thermomix=) Until then, it’s back to the stovetop for me.
    *I write this for two reasons; first is to say a huge THANK YOU for the recipe! Second is to give fair warning to everyone out there regarding their individual microwaves- when they say “cooking times may and/or results may vary”- take it seriously! Know your appliance, adjust accordingly, & if not an experienced microwave user/cooker (I am not!), simply make the caramel layer on the stovetop. It’s just as quick as the microwave when using the sugar-free syrups~ the syrup is what changes the time & process so drastically from making traditional caramel sauce or candy.
    *Btw, I broke up the rock-solid caramel into ‘toffee bits’ for other uses, so all was not lost~ ingredients are expensive!
    **Oh, one more thing~ make this recipe! It’s amazing =)

      Hi Samantha, thanks for your feedback. Can I ask were you using Sukrin syrup? I have used a few microwaves in my time and we have testers with varying wattage but I have never heard of anyone taking it that far in under 4 minutes? Like you mentioned it could be your model so I would use maybe a medium temperature rather than high (if you used Sukrin). If it was a different syrup brand then it may have a lower boiling point and that is what has caused the separation and toffee effect.
