I am kind of loving these super simple no-fail cheesecakes, for that little sweet hit you need occasionally, or for that extra bit of fat in your diet.

This version is beautiful.  Dial up the peanut butter (or any nut butter) to your own taste.  The chocolate layer is to die for.  I have to confess I just ate some.

  • 30 g butter melted
  • 1 tsp vanilla extract
  • 5 g cacao unsweetened
  • 60 g almond meal or hazelnut
  • Optional 4 drops caramel liquid stevia
  • 20 sweetener I use erythritol
  • 250 g cream cheese
  • 40 g sour cream
  • 1 egg
  • 1 tsp vanilla extract
Layer Flavourings
  • 20 g peanut butter or any nut butter
  • 50 g dark chocolate 80%, melted
  1. Preheat oven to 180℃
  1. Mix all base ingredients together
  2. Place into 12cm spring form tin
  3. Cook 6 minutes
  4. Cool
  1. Add sweetener to mixer
  2. Blend 10 seconds / speed 7
  3. Add rest of filling ingredients
  4. Mix 1 minute / speed 5.5
  5. Pour 120g of mixture into separate bowl
  6. Mix with peanut butter
  7. Add melted chocolate to rest of filling
  8. Mix 20 seconds / speed 5
  9. Spoon one half of chocolate mixture on top of base
  10. Smooth off the top
  11. Top with peanut butter mixture
  12. Smooth over
  13. Top with additional layer of chocolate filling and refrigerate until set
Recipe Notes

If you don't have a Thermo Mixer this is very easily made with any mixer, or by just using a bowl and a spoon, and some good old fashioned elbow grease.
