I really love this kind of recipe and eating especially in the summer months. While it is a warm meal it just has these beautiful freshness about it that is very summery.

- 1 tbsp fresh galangal
- 1 tbsp fresh ginger
- 1 tbsp fresh turmeric
- 1 stalk fresh lemongrass white part only, chopped finely
- 1/2 spanish onion
- 6 dried chillies
- 3 fresh chillies
- 1 tsp lime zest
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 tsp fennel seeds
- 1/2 tsp cinnamon
- 1/2 tsp white pepper
- 1 tsp pink Himalayan salt
- 4 roots and stems fresh coriander
- 2 kaffir lime leaves
- 2 cloves garlic
- 2 cardamon pods
- Add all ingredients to mixer
- Blend 5 seconds / speed 10
- Scrape bowl
- Repeat until paste consistency
