How To Make It
Step 1. Melt the dark chocolate over a double boiler or in the microwave and set aside to cool to room temperature.
Step 2. Place egg whites in a stand mixer bowl and whip until soft peaks form.
Step 3. With the mixer running at medium speed, add the sweetener 1 tablespoon at a time. Whip until stiff peaks form.
Step 4. With the mixer running at medium speed, add the egg yolks one at a time beating well after each addition. Reserve.
Step 5. In a separate bowl whip heavy cream until thickened and stiff peaks. Add nutmeg, melted chocolate, vanilla and reserved whipped eggs and fold into the whipped cream.
NOTE: The chocolate may set into little choc bits, but it makes the mousse just as delicious.
Step 6. Divide mixture between 6 glasses and place in the fridge to set.

Keto Chocolate Mousse

- 100 g (3 ½ oz) dark chocolate
- 2 large (2 large) eggs separated
- 1/3 cup (⅓ cup) powdered sweetener (70g) I use powdered erythritol
- 300 g (1 ¼ cups) thickened cream
- 1 tsp (1 tsp) vanilla extract
- ½ tsp (½ tsp) nutmeg freshly grated
Instructions
CONVENTIONAL METHOD

THERMAL METHOD
- Clean and dry mixing bowl thoroughly. Insert Butterfly. Add egg whites and set timer to 5 min/37℃/speed 4. After 2 minutes remove MC and spoon in sweetener 1 tbsp at a time, mixing well after each addition, then add egg yolks one at a time. Scrape from bowl and reserve.
- Place chocolate into a clean and dried mixer bowl; chop 10 sec/speed 8. Scrape down sides of bowl; melt 3 min/60°C/speed 2.
- Insert butterfly into a clean mixer bowl. Add cream; mix 20 sec/speed 3 or until the cream is thickened. Add all ingredients into cream and fold to combine.
- Divide mixture between 6 glasses and place in the fridge to set.

I’ve made this twice now and it hasn’t turned out the best either times. After I whip the cream I add the melted chocolate to the cream but it doesn’t combine well, the chocolate solidifies into lots of tiny pieces making it grainy. Any tips?

Try bringing the chocolate to a cooler temp and a little bit of cream in after it has cooled and the whip in all together

Wow! Is all I can say – so easy – although I did have to message the wonderful Megan half way through as wasn’t sure if whipped cream was to go in the mousse or was a topper! (It goes in with egg whites and chocolate!) I made 9 little chic pots – 10 really if you count the one I may have inadvertently eat while making it. I added the orange essential oil – Mr. non LCHF couldn’t tell it was Keto and has devoured 3 already. Great ‘do ahead’ dessert. Thank you Megan! -
