Ingredients

  • 500 g cauliflower in florets
  • 100 g cream cheese
  • 70 g cream thickened or heavy cream
  • 1 clove garlic
  • 2 tbsp jalapenos pickled, chopped
  • 1 tsp Ranch Seasoning
  • 120 g cheese grated - I used a combination of cheddar and jack
  • 110 g bacon
  • 2 green onions
  • 2 tbsp sour cream

Instructions

CONVENTIONAL METHOD

  • Steam the cauliflower in a steaming basket set over simmering water until al dente. Transfer cauliflower to a casserole or baking dish. Set aside.
  • Preheat the oven to 200°C/180°C fan/400°F.
  • Add cream cheese, cream, seasoning, garlic, and jalapenos to a small heat-safe bowl and combine. Heat in the microwave for 1 minute to soften the cream cheese. Pour the sauce over the cauliflower. Stir through half the cheese. Scatter the bacon and remaining cheese over the top. Bake 30 mins or until golden bubbly goodness. Serve with green onions and sour cream.
