Mad Creations Keto Cheese & Bacon Aussie Beef Pies

Delicious in every bite! Pastry made out of cheese and bacon what is not to love.

Ingredients

  • 100 g hickory smoked bacon
  • 100 g cream cheese
  • 270 g grated tasty or jack cheese
  • 125 g lupin lakes for grain free use almond meal
  • 45 g psyllium husk
  • 2 eggs

For Pie Filling

  • 1/2 onion
  • 1 garlic clove
  • 100 g hickory smoked bacon diced
  • 250 g grass fed beef mince
  • 2 tsp Herbamare or a stock cube
  • 1 tbsp gluten free tamari or coconut aminos
  • 1/2 cup water
  • 1 tsp oregano
  • 2 heaped tsp tomato paste
  • 3 heaped tsp psyllium husk
  • *Optional Vegemite or Aussiemite if not bothered by gluten or sugar

Instructions

THERMOMIX® METHOD

  • Preheat oven to 200℃
  • Add smoked bacon to mixer bowl. Chop 20 seconds/speed 5
  • Add cream cheese and grated cheese. Mix 10 seconds/speed 4
  • Cook 5 min / 100℃ / speed 1
  • Add psyllium husk, lupin, seasoning and eggs. Mix 20 sec/speed 3
  • Knead 3 min / dough setting
  • Press 2/3 of the mixture into greased large muffin tray, or pie tins, reserving the rest of the dough for pie tops.
  • Bake 9 minutes or until lightly golden

For Pie Filling

  • Place onion and garlic into mixer. Mix 3 sec / speed 6.
  •  Add diced bacon and beef mince. Cook 5 min/ 100℃ / reverse soft
  • Add oregano, tamari, tomato paste, water, and psyllium. Season to taste.
    Cook for a further 5 min / 100℃ / reverse soft. Cool before spooning into pie crusts.

For Pie tops

  • Prepare dough on silicone mat or on non stick baking paper
  • Squeeze mixture in the ball of your hand, push into an egg ring to shape the top of the pie. Place on top of the pie and bake 7 minutes or until golden.

CONVENTIONAL METHOD

  • Preheat oven to 200℃
  • Add smoked bacon to food processor blend until smooth.
  • Add cream cheese and grated cheese. Pulse until combined.
  • Spoon mix into large glass bowl and cook in microwave on medium for 2 minutes.
    Stir through psyllium husk, lupin, seasoning and eggs until well combined.
  • Press 2/3 of the mixture into greased large muffin tray, or pie tins, reserving the rest of the dough for pie tops.
    Don't make it too thin but also not too thick especially in the corners.
    Bake 9 minutes until lightly golden

For Pie Filling

  • Finely dice onion, garlic and bacon. Sauté over medium heat until onion is translucent and garlic fragrant.
  • Add beef mince, oregano and cook until browned. Add tamari, tomato paste, water, and psyllium husk. Cook for further 5 minutes until gravy is thick and rich. Season with salt and pepper. Cool before spooning into pie crusts.
  • Follow instructions for cooking pies as above.

Notes

This recipe is suitable to freeze cooked and thawed when desired.
Almond or seed meal is a good alternative to lupin flakes
These pies are also suited to be cooked in a pie maker
