Keto Thai Green Curry Paste

Ingredients

Green Curry Paste

  • 2 tablespoons coriander seeds
  • 1 tablespoon cumin seeds
  • 1 tablespoon black peppercorns whole
  • 8 green chillies see notes
  • 2 golden shallots coarsely chopped
  • 2 cloves garlic smashed
  • 1 tablespoon lime juice
  • 2 fresh coriander with root
  • 2 kaffir lime leaves if you dont have it, dont worry
  • 2 teaspoons fish sauce
  • 2 - inch galangal peeled and coarsely chopped
  • 2 lemon grass white part only, coarsely chopped
  • 1/2 cup water

Instructions

CONVENTIONAL METHOD

  • Dry fry coriander seeds, cumin seeds, peppercorns until fragrant
  • Add all ingredients to blender or large mortar and blend until a smooth paste forms.

THERMAL METHOD

  • Cook coriander seeds, cumin seeds, peppercorns 2 min/90℃/slowest speed.
  • Add remainder of ingredients; mix 10 sec/speed 10. Use as per the recipe required.

Ingredients
If you do not have galangal substitute ginger. The best way to store galangal or ginger is in the freezer, and remove and slice off what you need, or grate into your cooking.  No wastage ever!
Ways to Use Green Curry Paste
    1. Green Curry: The most obvious and traditional use is to make Thai Green Curry. Sauté the paste with coconut milk, vegetables and your choice of protein (chicken, shrimp, tofu) for a delicious and fragrant curry. Keto Thai Chicken Green Curry is always a favourite!
    2. Stir-fries: Add a spoonful of Keto Thai Curry Paste to your stir-fries for an extra kick of flavor. Try it with a dash of coconut cream in our Salmon Stir Fry
    3. Marinades: Create a flavorful marinade mixing with coconut milk, lime juice, and a touch of fish sauce or soy sauce. Meal prep chicken, beef, or fish for a few hours before grilling or baking.
    4. Soups and stews: Enhance the taste of soups or in an Instant Pot curry or slow cooker.
    5. Dips and Sauces: Mix curry paste (use any curry paste like our red curry paste, yellow curry paste, or tikka paste) with yogurt, sour cream, or mayonnaise to create a zesty dip or sauce.
    6. Noodles and Rice Dishes: Add a teaspoon or two of paste to fried rice, rice noodles (such as Pad Thai), or stir-fried noodles for a burst of Thai flavors. For keto-friendly use Keto Pasta or Cauliflower Rice. It blends well with other ingredients and infuses the dish with its distinctive taste.
    7. Grilled or Roasted Vegetables: Toss your favourite vegetables in a mixture of paste, oil, and a little salt. Grill or roast them until tender and caramelized for a delicious side dish bursting with flavours.
    8. Spreads: Mix with softened butter or cream cheese to create a savoury spread for bread, crackers, or as a filling for sandwiches. 
Freeze the paste into 1-tablespoon serves. The paste can be used from frozen. Frozen flavour cubes like this make it easy for any keto meal plan to come together in minutes.
